Se pas\u00f3 de 69 kilos anuales per c\u00e1pita en 2007 a 58 en lo que va de este a\u00f1o. Si se recuerda que en 1980 el nivel era de 85 kilos y que en 1956 se hab\u00eda superado los 100, el derrumbe es claro.<\/p>\n<p>En paralelo, desde 2007, el consumo de pollo salt\u00f3 de 28,9 kilos anuales per c\u00e1pita a 45,6 (sum\u00f3 casi 17) y el de cerdo pas\u00f3 de 7,9 a 13,8 (casi 6 m\u00e1s).<\/p>\n<p>Producto de estos cambios,\u00a0<b>el consumo de pollo y cerdo ya suman unos 59,4 kilos anuales por habitante,<\/b>\u00a0contra los 58 de carne vacuna. As\u00ed, por primera vez en la historia, la carne vacuna pas\u00f3 a ocupar menos de la mitad de la &#8220;parrilla&#8221; nacional. En fen\u00f3meno se detect\u00f3 por primera vez en 2016, y este a\u00f1o se mantuvo.<\/p>\n<p>Una pista sobre las causas de este fen\u00f3meno est\u00e1 en la evoluci\u00f3n de los precios de cada alternativa, que perjudic\u00f3 en especial a los cortes vacunos, volviendo relativamente m\u00e1s econ\u00f3mica a su competencia.<\/p>\n<p>Seg\u00fan registros del\u00a0<a href=\"http:\/\/www.ipcva.com.ar\/\"><b>Instituto de<\/b><\/a><b><a href=\"http:\/\/www.ipcva.com.ar\/\">Promoci\u00f3n de la Carne Vacuna Argentina<\/a>,\u00a0<\/b>en los \u00faltimos cinco a\u00f1os el precio promedio del asado en Buenos Aires subi\u00f3 en pesos un 247%, frente a un 204% del pechito de cerdo y un 178% del pollo entero.
